THE BEST vegan chili recipe you're ever going to find!

I originally found this recipe typed out on a random Facebook post when I was trying to find a copy cat recipe for chili I had at a tiny diner in Vermont. The recipe was not a copy cat but it seamed to be on the right track so I went for it. The recipe wasn't vegan but it was easy enough to make it so and then I modified the hell out of it so I'm calling this version of it mine! Hope you like it.


This recipe takes about 2 hours & serves 4-6 (my partner & I ate 3 servings each)


1/2 Package of Soyrizo

1 - Medium white onion

Cooking oil for browning meat. I used olive oil.

Granulated onion

1 - 8oz can tomato sauce

Light chili powder

Dark chili powder

Garlic powder

Salt

Ground cumin

Cayenne pepper

Black pepper

Paprika

2 cups dried kidney beans (or 1 can)

2 cans Diced Tomatoes with Green Chilies (Original or mild style)

3 - Chipotle peppers in adobo sauce (canned), finely chopped


RECIPE:

Cover dried beans with water (2 inches above the beans) and let boil for 5 minutes.

Remove beans from heat and let sit for 30 minutes.

Prepare 1st and 2nd dump spices in two small bowls and set aside until needed.

First Dump:

1 TBS Dark Chili Powder

½ TBS Light Chili Powder

½ tsp Garlic Powder

1/4 tsp Salt

½ tsp Ground Cumin

½ tsp Cayenne Pepper

1/4 tsp Black Pepper

1 tsp Not Chick'n Cubes crushed finely

Second Dump:

½ TBS Light Chili Powder

½ TBS Dark Chili Powder

½ tsp Paprika

½ tsp Ground Cumin


Step 1:

Put Impossible meat + Soyrizo in a skillet with oil and lightly brown. Add granulated onion while browning.

Coarsely chop white onion and sauté in separate pot (you'll use this one for the chili) in olive oil until golden brown. Remove from heat and set aside.


Step 2 - The Juice:

Make beef broth - mix 1 tbs Better Than Bouillon - No Beef Base in 1 cup of boiling water

Combine

1 Can (8 oz) Tomato Sauce

1 Cup Beef Broth

Sautéed onions

Beef & Soyrizo

Cook on low for 30 minutes, stirring occasionally very gently. Allow condensation on lid to go back in the pot.


DO NOT combine beans. Leave soaking.


Step 3 - First Dump:

Combine all ingredients from first dump

1 TBS Dark Chili Powder

½ TBS Light Chili Powder

½ tsp Garlic Powder

1/4 tsp Salt

½ tsp Ground Cumin

½ tsp Cayenne Pepper

1/4 tsp Black Pepper

1 tsp Not Chick'n Cubes crushed finely

Kidney Beans

3 - finely chopped chipotle peppers in adobo sauce.

Cook for 1 hour, covered, stirring occasionally very gently. Allow condensation on lid to go back in the pot. Try not to let this shit boil very much.


Step 4 - Second Dump:

Combine all ingredients from second dump

½ TBS Light Chili Powder

½ TBS Dark Chili Powder

½ tsp Paprika

½ tsp Ground Cumin

2 - cans Tomatoes with Green Chilies

Leave covered and simmer for 30 minutes, gently stirring occasionally.


Serve with any carb of your choice. I love it with corn chips & I'm always loving it with mac & cheese! Crackers, rice, and potatoes are also great options!
